Ingredients:
• 1 onion
• 1 clove garlic
• 25 g butter
• 6 cups fish stock
• 1 cup long grain rice
• 200 g mixed fish such as prawns, scallops, mussels and white fleshed fish fillets
• 1 cup EASIYO Natural Yogurt
• 2 tablespoons chopped parsley
 

Method:
Peel onion and chop finely. Crush, peel and chop garlic.
Melt butter and sauté onion and garlic until onion is clear.
Add fish stock and bring to the boil.
Add rice. Cover and cook for 7 minutes.

Prepare fish as necessary, cutting fillets into cubes.
Add to soup and cook for 4 minutes or until rice and fish are cooked.
Stir in yogurt. Bring to the boil but do not boil.
Mix in parsley and serve.
