Ingredients:
• 4 to 6 pieces pork schnitzel
• 2 tablespoons mango chutney
• ½ cup EASIYO Natural Yogurt
• 1 tablespoon cornflour
• About 1 ½ cups coconut
• 4 small unpeeled bananas


Method:
Trim any fat from pork schnitzel.
Mix chutney, yogurt and cornflour together in a shallow bowl.
Dip schnitzel in this to coat both sides.
Coat with coconut. Place in an oiled roasting dish.
Wash and dry unpeeled bananas. Place in dish with schnitzel.

Bake at 190 C for 10 minutes, turning halfway through cooking. 


Variations/Comments:
This is a great way of cooking schnitzel without using heaps of oil. The schnitzel size will determine how many you need.
