In the southern most inhabited island of New Zealand, Stewart Island, where the water is cool and clean all year round we farm raise Chinook or King Salmon. Our natural breeding program produces eggs that are grown out to young fry at our two hatcheries located on two of the largest and cleanest rivers that have their origins in the snow fed glaciers in the Southern Alps of New Zealand - the Clutha and Waitaki rivers. The young fry are transferred to our Stewart Island farms when they reach around 100 grams.
After two years of careful feeding and management in the pure cold southern ocean waters the fish are 3 to 5 kilograms in size and in perfect condition for harvest, processing and sale to market. The fish are transported to Bluff and processed for airfreight in fresh form or deep frozen for shipping by containers. About 3,000 tonnes of salmon are harvested each year.
