Smooth Dory is a member of the deep sea Oreo Dory family and produces a firm, high quality, white fillet for the most discerning markets.
Black Dory is also a high quality fillet with slightly firmer texture than smooth dory and a more distinct flavour.
Smooth and Black Dory are sub-antarctic species and are bottom trawled at depths of up to 1,000 metres. Harvesting is year-round, while premium quality is ensured by short trawls and rapid freezing.
Smooth and Black Dory fillets are processed from both iced whole fish and frozen-at-sea headed and gutted product. Filleting is generally performed either by hand or sophisticated mechanical equipment to achieve maximum recovery and maintain quality standards.
Smooth dory has a deep cream colour; it has a firm texture and a mild but distinctive flavour. Dory fillets are small, thin and quite delicate.
Dory is useful in portion-controlled menu situations, as a whole fillet may be used. It is excellent for restaurants, function caterers and retail fish bars.
